The Bodycare Journal: Blueberry Matcha Mango Recipe
Our bodies work from what we give it. Lately, I’ve been practicing overall balanced living. This means having a equal amount of health, time with friends and family, work, hobbies, self care, finance, and more! We’ll dive deeper sometime soon! As I practice this, I noticed that eating healthier is a bit challenging!
The main problem for me is sugar!!! Omg, sugar is in everything and makes everything taste better lol. That’s what I thought when I first started cutting back. Honestly, once you get in a routine, eating less of something starts to become second nature!
One thing that helped make this switch easy is chia pudding. Chia pudding can be eaten as a snack, for breakfast, or dessert! There are so many different ways to assemble this dish. Lately, I’ve enjoyed it like this,
Blueberry Matcha Mango
Instructions:
•The base- blend a large spoonful of coconut cream just the top, 1/2 cup of coconut milk, honey, a splash of vanilla extract, cinnamon, and blend together. (This is what you’ll mix the chia seeds with)
•POUR THAT INTO A BOWL
•stir in chia seeds. I used 1/3 cup. (Use a little less if you don’t want your pudding as thick)
•LET PUDDING rest FOR at least 1 HOUR
-mango cream: I love to layer this with the chia pudding
•mix rest of coconut cream with the remaining liquid in the can. —pour.
•add honey
•add mango (fresh or frozen)
BLEND
Assemble creating layers. Add fresh blueberries in between and on top! Store in glass jars or bowls and eat with in 3-5 days.
